Za'atar Disinfection with AquaSEEN Food Grade Disinfectant

AquaSEEN™ is a broad-spectrum, antimicrobial that eliminates harmful bacteria, viruses, molds and yeasts (wild strains). This trial was carried out by a Jordanian food manufacturing factory specializing in Za’atar products.

AquaSEEN Efficacy in Eliminating Bacterial Contamination in Za’atar.

Objective:
The main objective of this case study is to evaluate the efficacy of AquaSEEN in disinfecting dry food substances, such as Za’atar. For that, a Za’atar sample included a total bacterial count and high levels of Enterobacteriaceae, including Salmonella, which was used to be disinfected with AquaSEEN to observe the efficacy.

Methodology:
Disinfection Methodology
o AquaSEEN Disinfectant Ready to Use was sprayed on the Za’atar sample (containing Sesame) in a manner that ensures complete disinfection of the entire quantity of Za’atar.
o The next step involved exposing it directly to heat (120-130°C) to maintain the dryness of the Za’atar.
The Za’atar sample was kept in a sealed package.

Testing Methodology:
o Four packages of the disinfected Za'atar with AquaSEEN were tested directly.
o After two weeks from the disinfection process, another set of 6 packages was tested.

Results:
The first test passed physically, chemically, and biologically. The second test, conducted after 2 weeks from the disinfection process, also passed physically, chemically, and biologically.

Conclusion:
Through testing and analysis, the results of this case study showed significant advantages for using AquaSEEN, such as:
o AquaSEEN eliminates the microbial load in dry food, including Za’atar.
A step with heat must be followed by the disinfection process with AquaSEEN to maintain the dryness of the dry food substance, including Za’atar.
o AquaSEEN does not leave any residues for bacteria, preventing bacterial regrowth, as confirmed by the test conducted two weeks after the disinfection process with AquaSEEN.
o AquaSEEN does not affect the physical properties of Za’atar.
o AquaSEEN also assists in the disinfection of sesame, which is a component of the Za’atar samples that were disinfected with AquaSEEN.
This trial confirmed that AquaSEEN is an ideal and cost-effective alternative to the radiation treatment commonly used for Za'atar disinfection.
