Salmonella is considered as a major concern for both traders and manufacturers of sesame and its products, as it can lead to foodborne illnesses. Addressing this issue, AquaSEEN is a primary solution for eliminating Salmonella and protecting sesame-based food products. A case study was conducted by a Jordanian food manufacturing factory specializing in sesame products, focusing on the disinfection of sesame using AquaSEEN. This study aimed to assess the efficacy of AquaSEEN in eliminating Salmonella and ensuring the safety and quality of sesame products.
Objective:
The main objective of this case study is to evaluate the efficacy of AquaSEEN in disinfecting the sesame and destroying the Salmonella. For that, a sesame sample included a high amount of Salmonella was used to be disinfected with AquaSEEN.
Methodology:
Disinfection Methodology
o AquaSEEN Disinfectant Solution was prepared by adding 5 liters of AquaSEEN to 3 meters of water.
o The sesame was soaked in AquaSEEN Disinfectant Solution for a night (Approximately 6-8 hours).
o Next, the sesame is exposed to heat.
o All the surfaces, conveyors and production lines were disinfected with AquaSEEN to prevent any cross-contamination.
Results:
o The microbial test results showed positive outcomes, approving AquaSEEN's efficacy in achieving a 100% elimination of Salmonella. The decrease from a high Salmonella concentration to nil Salmonella was successfully achieved.
o The sesame was retested after one month, and it still showed nil microbial load and nil Salmonella, indicating that AquaSEEN avoided the regrowth of Salmonella and any other bacteria.
o Also, AquaSEEN assisted in extending the shelf life of the sesame-based products, including the Tahina and Halava.
Conclusion:
Through testing and analysis, the results of this case study showed significant advantages for using AquaSEEN, such as:
o AquaSEEN eliminates the microbial load in Sesame, including Salmonella elimination.
o AquaSEEN does not leave any residues for bacteria and Salmonella, preventing bacterial regrowth, as confirmed by the test conducted one month after the disinfection process with AquaSEEN.
o AquaSEEN does not affect the physical properties of sesame, it does not impact its taste.
o To ensure comprehensive disinfection of the sesame and prevent cross-contamination from surfaces and conveyors to the sesame, AquaSEEN must be used for disinfecting surfaces, conveyors, and production lines.
o This trial confirmed that AquaSEEN is an ideal and cost-effective disinfection way for Sesame Disinfection and Salmonella Elimination.
